Cinco de Mayo and a GIVEAWAY

And a little more celebrating...I am really excited about the launch of AdheringWords.com I have been working on it for a long time. My home has suffered, and since Tuesday the piles of stuff are finally being tackled, and honestly not a moment to soon. We have a loft that is my workspace, but it has looked like a natural disaster of great proportion hit it. I abandoned the loft and desktop and moved my laptop to the kitchen table. Thank goodness I have a patient husband...sometimes to patient. I am embarrassed to say that it has taken the better part of two days to clean and reorganize it, but I am almost done. I will post pictures later of my clean space.

Now that I have vented and shared my deep dark secret, lets move on to the
fourth item to be included in the "Fabulous 5 GIVEAWAYS".

This is a fantastic set of 3 jars with chrome, screw tight lids. They read: flour, sugar and brown sugar. They would be perfect for any kitchen, in any home.


I am going to through a little twist in today's way for entering...I am going to a Cinco de Mayo party this weekend and I need to take a dish of some kind with us.

But I am at a loss for what to make...

wish I cooked more Mexican food - but the absolute winner for me every time is a simple fresh Salsa. I could eat it for hours, & not ever get sick of it! Can be made according to taste, & you can always change out the ingredients to include whatever is in season at the moment... I LOVE to include clack beans & fresh corn kernels, but would eat it any way (hot or mild)! Sorry no recipe, as I've always just gone with whatever loks good at the moment...

My favourite mexican dish is the quesadilla. Just mix salsa and cream cheese, spread on a tortilla and top with your favourite fresh veggies. I like green onion, green pepper, tomato and avacado. Put a good handful of your favourite grated cheese on top (I'm an old cheddar nut!), cover with another tortilla, press down lightly and bake in a 425 degree oven or toast under a broiler. Cut into wedges and serve with sour cream, salsa and guacamole.

I love a bean dip made just with some refried beans, some salsa, a little sour cream, and some cheese. You can make it to taste and then it is wonderful with tortilla chips. Yumm!

I heart Mexican food too. My absolute favorite is Corn and Avocado Salsa. The recipe can be found at www.beckyhiggins.com in her recipe section. Delish!
BTW I LOVE these jars...what a great Mother's day gift!

First let me say Thank You for reminding me that it's cinco de mayo soon! I live in France and would have totally forgotten this holiday! My favorite Mexican dish has got to be a simple salsa with tons of fresh cilantro!

Mexican food is my FAVORITE!!!!!!!

I love to black beans....I saute desired onions/green peppers in olive oil with some olive oil. Add black beans and add your favorite taco sauce or salsa...I would use about a cup of salsa to one can of beans. Could be served over white rice or even with chips with cheese sprinkled on top.

My favorite Mexican dish is anything with black beans.. My cousin up there Jan Ellen that sounds amazing!! I'd definitely take that if I were you!! :)

And what cute jars.. I'm obsessed with jars for flour and sugar!! :)

grilled chicken faquita quesadilla,I'm not sure how it is fixed.We make regular chicken faquita's at home,they are good but not as good as at the mexican place.

Im not a huge fan of mexican. Especially if I have to cook it.. The easiest things I've found to make was tortillas with black olives, refried beans, lots of sprinkled chedder and any other type of cheese you love, and shove it in the oven at 350 till cheese is completely melted. Then I pull it out and add, salsa, and sour cream and chow down.. You can put anything on it you like, some like chopped onions, black beans and what not on it.. Too complicated for me. I just like the simpleness of that.. It's quick and so simple...

My favorite Mexican dish is chicken enchiladas. There's lots of differnet recipes, but it's hard to go wrong with that one!

Soups are always easy. I really like chicken tortilla soup. There are so many variations you can really add whatever you like to it.

I love Shredded Beef Tacos. That's what's for dinner tonight!

Buy a 4-5 lb chuck roast and trim all visable fat. Slice an onion, red and green bell pepper and smash 6 or 7 garlic cloves, the juice of 1 lime and 1 lemon and add to the beef in a pot and cover the beef with water. Add salt, pepper and cumin to taste. Bring to a boil, then reduce heat and simmer slowly 6-7 hours or until you can shred the beef with two forks. Shred all of the beef and add it back to the leftover juices in the pot. Refrigerate overnight. I know, I know, it will be hard, but you will not regret this step! The next day, I portion the meat into individual Ziploc bags and freeze. Then when you want shredded beef tacos, you pull one Ziploc out of the freezer and use whatever toppings you like for tacos. Sooooo god...and so worth the effort of refrigerating overnight. The beef can also be used for enchladas or quesidiallas.

Oh man I wish I was going to your party - I love Mexican food. Here is the easiest recipe I have -

Mix one can of refried beans with an envelope of taco seasoning. Then add one cup of cheese. Bake in the oven until warmed through. Serve along side tortilla chips and ENJOY -

Salsa & guac. I cheat some, make up some pico de gallo and mix that with avocados for the guac and then take the rest of the pico and dump a jar of salsa in it. It is so yummy and tastes fresh.

These are so easy and so yummy! I make them every cinco de mayo.

Sopapillas

* 2 cups all-purpose flour
* 2 teaspoons baking powder
* 1 teaspoon salt
* 2 tablespoons shortening
* 3/4 cup water
* 2 cups vegetable oil for frying

* add to recipe box Add to Recipe Box

DIRECTIONS

1. In a large bowl, sift together flour, baking powder and salt. Cut in shortening until mixture resembles coarse crumbs. Using hands, mix in water to make a smooth dough. Knead lightly on a floured surface. Cut dough into 12 pieces, and shape into round balls. Cover, and set aside.
2. Heat oil in deep-fryer to 375 degrees F (190 degrees C).
3. On a lightly floured surface, roll dough into thin circles. Cut each circle into triangles. Fry in hot oil, until golden brown, turning when dough puffs. Remove, and drain well on paper towels.

Mmmm.... Chicken Tacos. I cook boneless, skinless chicken thighs in the slow cooker with a cup of salsa, a chopped ancho-chili, and chopped garlic. Then I fry up some corn tortillas and fill them up with the chicken, which I've shredded, and my favorite toppings. Yummy!

put some refried beans, salsa and cheese in between two tortillas pop in the oven at 400 for 15 minutes and you will have great crunchy quesadillas!!!!

My favorite Mexican dish is chile rellenos. Unfortunately, not only is it hard to spell, but I have never attempted to make it! I love the version at Reata the best.

I actually really like Tex-Mex more than traditional Mexican food. We all LOVE a certain tex mex casserole I make! I usually don't like casseroles, but I must say that I love this one. I got it out of a Southern Living magazine about 10 years ago...it is kinda long though

I don't really make a lot of Mexican dishes, I can't handle anything the least bit spicy. Mild salsa can give me heartburn! So, my fave dish is tacos, nothing fancy, real plain.

My favorite dish is my mother-in-laws chicken enchiladas. It is a lengthy process but I know it envolves a lot of sour cream, green chiles, and cream of chicken!

I love stacked enchilladas
ground hamburger mixed with refried beans
layer corn tortillas, enchillada sauce, and meat mixture with cheese until dish full. cook till heated through. serve with lettuce sour cream and olives yummy and quick!

Oh this is hard, because I do not like to cook at all! But if I had to choose I would say that I love quesadillas and chicken tacos! (both easily made!) lol
I love these jars, my husband would love them even more! :)
